Tomato(seeded and cut into quarters) 4pcs Tomato juice 500ml Lobster claw 2pcs Shallot(diced) 2pcs Cucumber(seeded and diced) 1pc Celery(chopped) 1stick Parsley(chopped) 1tsp Basil(chopped 1tsp Olive oil 2tsps Sherry vinegar pinch Balsamic vinegar pinch Salt and pepper pinch
Procedures:
1.Place tomatoes, tomato juice, shallots, cucumber and celery in the blender. Blend until smooth(about 3-4mins). Season with salt and pepper. Freeze in the refrigerator. 2.Cook lobster claws in water for 3mins. Shelled and steam for 2-3mins. Sliced and marinate with sherry vinegar, balsamic vinegar, olive oil, parsley, basil, salt and pepper for 5mins. 3.Place the lobster garnish in a bowl and pour on the soup. Decorate with little balsamic vinegar and serve.
